I found the answer to this. You change the admin on openldap with the following:

I've installed the Yubiradius VM and I'm trying to do some testing. I can login to the already installed openldap using phpldapadmin the problem is that I thought I had changed the admin password for that, but now I can still login using the password I set as well as yubico as the password.

Where is the config file that openldap is using? I want to change the password for the demo account on open ldap server. The admin account that uses password yubico.

Any help or direction would be appreciated. I've looked through all the config files I could find, but they don't seem to be the right ones.
